  • 2 1/4 cups King Arthur all purpose flour
  • 2 1/2 tsp baking powder

  • 3/4 tsp ground cinnamon
  • 1 cup eggnog
  • 1-2 tsp rum extract
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 tbsp butter, melted
  • 2 eggs
  • 1 1/2 tsp vanilla extract

Streusel Topping:

  • 1/2 cup sugar
  • 1/2 cup flour
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup melted butter
  • 1 tbsp eggnog

Instructions:

  1. Preheat your oven to 350°F (175°C)  and grease loaf pan or use parchment paper.
  2. In a medium-sized bowl, whisk together the flour, baking powder, salt, nutmeg, and cinnamon.
  3. In a large bowl, blend together eggs, sugar, vegetable oil, melted butter, eggnog, vanilla and rum extract until smooth.
  4. Gradually mix the dry ingredients into the wet mixture. Ensure everything is just combined to avoid overmixing.
  5. Pour the batter into the prepared loaf pan, smoothing out the top. Sprinkle the streusel topping on top until completely covered. Place in the oven and bake for 30-45 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs attached.
  6. Once baked, remove from the oven and let the bread sit in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
