  • Flour: All-purpose flour serves as the base for the loaf, providing structure and a tender crumb.  King Arthur all purpose flour is always my go-to. 
  • Spices: Ground ginger, cinnamon, cloves, and nutmeg are essential for that warm, aromatic flavor. 
  • Molasses: Unsulphured molasses lends a deep, rich sweetness and a dark color to the loaf. Grandma’s Molasses is a tried and true ingredient. 
  • Butter: Unsalted butter adds moisture and a buttery richness to the gingerbread. 
  • Eggs: Eggs act as a binding agent and contribute to the texture of the loaf.
  • Baking Soda: Baking soda helps the loaf rise and gives it a light, fluffy texture.
  • Brown Sugar: Brown sugar enhances the sweetness and adds a subtle caramel note.
  • Milk: Milk keeps the loaf moist and tender. I always use oat milk that I make from scratch using the MioMat

How to Make Gingerbread Loaf

Tools Needed:

Ingredients:

  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1/4 cup molasses
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/2 cup oat milk (or whatever milk you prefer)
  • 1/2 cup sour cream
  • 2 cups  King Arthur all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 4 teaspoons ground ginger
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • powdered sugar 

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease loaf pan or use parchment paper.
  2. In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, salt, baking powder and baking soda. Set this dry mixture aside.
  3. In a separate large bowl, cream together the softened butter and brown sugar until light and fluffy. This takes about 2-3 minutes.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  5. Stir in the molasses and vanilla until well combined. Add the milk and sour cream and beat well.
  6. Gradually add the dry ingredients. 
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the gingerbread loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Once cooled completely, dust with powdered sugar.
